VINIFICATION
The selected grapes of this special variety are hand picked the last week of September and the first of October. After de-stemming, they undergo a reasonably long red vinification during which they are pumped over frequently in order to extract the typical colour and aromas. Following racking, fermentation is completed at a controlled temperature of 18-20°. After several decantations the wine is left to age for a few months in steel barrels.
